It’s been really bloody cold here lately, and no matter how long I’ve lived here, I’ll never get used to it. Like most people, when it’s dark and freezing outside all I want to do is curl up on the couch with something hearty to fill my belly. So to kick off my first post I decided to give the Veggie Pot Pie Stew and Sweet Potato Drop Biscuits from Appetite for Reduction a go.
Soups and stews are usually really great to make when you don’t want to be fussing over a dish all night as most of the time is spent with it bubbling away on the stove. The Veggie Pot Pie Stew was easy to make (unless you find chopping vegetables difficult) and only took about 45 minutes for it to be ready. Thick and rich this dish definitely satisfied my appetite with its savoury flavour from the thyme and sage. The recipe calls for veggie stock but has a note saying that a no-chicken broth could be used to enhance the flavour, I totally second this suggestion, I used the Nutrimax “chicken” flavoured broth and thought it made the stew extra delish. For a little added bonus this dish only uses 1 teaspoon of oil and is really low in calories, that’s A++ in my books.
Next up were the Sweet Potato Drop Biscuits. These cute little blobs of orange took no time to make and I even roasted my own potatoes. You could always boil them if you want but I really think roasting them adds much more flavour. Word of advice though, peel your potatoes, I left the skin on thinking I would try to add a few extra nutrients to my meal but it gave the biscuits a more ‘earthy’ flavour, which is fine I guess, if you’re into that sort of thing. These are made with very little oil, so they aren’t flaky like regular biscuits but they are soft and delicate with just a little added sweetness, which was a nice accompaniment to the savoury stew.
If these two recipes are any indication, I think me and Appetite for Reduction are going to have a long and happy life together. Well I’m off to find a crappy movie on tv and curl up on the couch with my kitty, till the next meal.
