Vegan Mofo Day 12: Banana+Coffee+Chocolate=YUM

Ok, I know that this is a bit of a cop out but I haven’t had a whole lot of time to make anything that I’d consider blog worthy. I really wanted to make tofu sliders and salt and vinegar potato bites, but they both take a significant amount of time to make, and by significant I mean they won’t both be ready within an hour of when I get home from work. You remember when your mom used to tell you not to ruin your appetite before dinner by snacking too much? Well that lesson never really stuck with me. If there’s no dinner ready within a short amount of time I immediately head for the pantry and scarf down crackers, hummus, bread, basically anything worth snacking on and before I know it, I’m full, and dinner is ready. It’s a bad habit and due to this bad habit, today you get another smoothie recipe to add to the millions that are already floating around the internet.

I always loved the Banana Buzz smoothies at Jugo Juice, so by taking a recipe from Vegetarian Times and messing around with until it’s nothing like said recipe, I’ve tried to replicate the same flavour I used to love. How did it turn out? Um, well it’s not exactly like how I remember, maybe if I had picked up some kind of frozen soy yogurt it would be more similar but it still turned out really tasty none the less. I find that smoothies with bananas in them always turn out really rich; add chocolate and peanut butter (well I couldn’t pass up the chance to add peanut butter) and you get a super rich, super filling smoothie. It was a little too much for me so I thinned it out with some milk and ice.

I never thought of adding espresso powder to my smoothies before but I totally did it and I totally liked it. It’s not like it’s an overwhelming flavour but it is noticeable. If you just happen to be one of those people who absolutely despises the taste of coffee, then (A) What the hell is wrong with you? And (B) You can of course cut back on the amount. Maybe start with a 1/4 teaspoon and keep adding until you reach a flavour you enjoy. Depending on how ripe your bananas are I left the sweetener optional, I added a teaspoon to mine. I think this smoothie would have been much better with chocolate soymilk instead of soymilk and cocoa powder but alas I did not have any and I didn’t feel like hiking over to the store at 9 in the evening. If you happen to have some chocolate milk, then feel free to mess around with this and sub it in place of the cocoa, just remember that you probable won’t need to add any agave as I’m sure it will be sweet enough.

 Bouncing Off the Walls Banana Smoothie
Makes 2 Servings
Adapted from Vegetarian Times 

Ingredients:

  • 1 banana, peeled and frozen
  • 1/4 cup soy or coconut yogurt
  • 1 cup soymilk
  • 2 tablespoons cocoa powder
  • 2 tablespoons peanut butter
  • 1 teaspoon espresso powder
  • 1/2 teaspoon vanilla
  • 1 – 2 teaspoons agave (optional)
  • 4 ice cubes
Directions:
Place all ingredients in blender and blend until smooth.
Pour into a fancy glass and enjoy!
