So after it’s been on the air for like 5 or 6 seasons, P and I have recently discovered the amazingness of Breaking Bad. Does anyone else watch that show? It’s so good! I always heard it was really good but didn’t want to start watching it a few seasons in, so we finally started from the beginning and in two weeks we’ve managed to watch 3 seasons. It’s a good thing we don’t have a hell of lot going on in the evenings lately because it’s so addicting. Most of our nights are spent with someone saying “just one more episode”. Just a few more seasons left and I’ll finally have my life back again 😉
As much as I love to cook, most times when I get home from work I’m not in the mood to make something that’s going to cause me much time or effort. Hence why I tend to eat a lot of sandwiches when we’re lacking for leftovers. I’m all about simplicity and there’s nothing much better than coming across a meal that consists of things I already have hanging out in the fridge or pantry and can literally be thrown into a pan and then into the oven. That’s why I have no idea why I’ve never made the Chickpea Broccoli Casserole from Vegan with a Vengeance before, really, why have I not made this before? It’s like the quickest meal in the whole damn cookbook! Which is pretty important when there are episodes of Breaking Bad to watch.
You basically just chop some stuff, mash some stuff, but it in a casserole dish and then bake it. Warm out of the oven it was pretty good, nothing mind blowing but pretty decent considering the amount effort it takes to make. There are a few things I’d change if I made it again and maybe I’d feel differently about it if I used a mandolin but the onion in it (and there was a lot!) didn’t seem to cook very well. I know it’d be adding an extra step but both me and P thought caramelizing the onions before mixing them in would have made the dish way more flavorful, but then what can’t caramelized onions make better? I also think sprinkling something over the top before baking would have been good, like herbed breadcrumbs or some homemade parmesan. We had it with some herb roasted farmer’s market potatoes, which were melt in your mouth good. I normally would never buy potatoes at the farmers market since I figured a potato was a potato, so how could they possibly be any better? Out of curiosity I picked up a bag and found out how wrong I was, I’ve never had potatoes that were so creamy and filled with flavour! Makes we wonder what other delicious things I’m missing out on at the farmers market.
