My mom being here seems to have gotten me into Christmas shopping gear, we spent most of the weekend hitting up stores and getting some gifts out of the way. I should probable note that this is very, very unlike me, I’m normally a total procrastinator who’s panicking on December 23 as I pay astronomical prices to Canada Post….as it turns out, sending things express post across the country the day before Christmas ain’t cheap. And can I just say how shocked I am to see Christmas stuff in stores already? It’s mid October! What the fizzle?! I’m positive that every year they bring everything out a day earlier then what they did the previous year, it’s a conspiracy I tell ya. I know some of you adore seeing Christmas items in October, but I’m totally that person who scowls and/or grumbles when I see stores getting out the Christmas wrapping paper too early. I just find that if everyone gets into the “seasonal spirit” too early, by the time it actually gets here I’m already over it. Done. Finished. Kaput. And I do actually enjoy Christmas, I just don’t need it dragged out over 4 months.
Well to prepare myself (mentally and physically) for all that shopping, I needed an awesome breakfast to fill my belly. Enter Red River Cereal. Has anyone who isn’t Canadian heard of this stuff? I’m pretty sure it’s strictly Canadian yumminess but I could be wrong. In case you’re not familiar, Red River Cereal is a hot cereal made from wheat, rye and flax; I was already eating flax when I was a teenager and didn’t even know it! Yay me! This cereal has been around forever, it was created in Montreal way back in 1924 and is still going strong today.
Plain cereal is great and all but I wanted to get a little more creative. I added some milk to make it creamier, some local blueberries that I just so happen to have stashed away, some tangy goji berries, just a touch of sweetness to compliment the berries and some toasted almonds to add a little crunch and some protein to keep me feeling full for longer. Plus a bit of spice and a splash of vanilla never hurt anybody. Hot cereal isn’t the most mind blowing thing, but my additions definitely made for a delicious bowl of comfort and I’ll be damned if one Maggie sized* bowl didn’t keep me going almost all day.
Blueberry Goji Red River Cereal
- 1/3 cup Red River Cereal
- 1/2 cup water
- 1/2 cup non-dairy milk
- 1 tablespoon agave or maple syrup
- 2 tablespoons goji berries
- 1/2 cup fresh blueberries
- Pinch of salt
- 1/8 teaspoon cinnamon
- 1/4 cup toasted almonds, chopped
- 1/2 teaspoon vanilla extract
In a small saucepan over medium high heat, mix together all ingredients besides for the vanilla. Cover and bring to a boil. Turn heat down to low and let simmer for 8 minutes, stirring from time to time. Remove from heat and mix in vanilla. Serve warm with a sprinkling of chopped almonds.
*Let’s just say it’s bigger than the average size.
